Collection: Mathieu Sabbagh - Sab's

SAB's is the nickname of Mathieu Sabbagh, the man who decided to work living spirits by hand to revive original eaux de vie, planted in the Burgundian terroir, exactly as the winegrower does with his plots and his grapes. Nestled in Beaune in the heart of Burgundy, SAB's operates a “traveling” still. A very special still, because it travels and distils in the village, that is to say on the very place of harvest, as could be done in the last century. Fifty years ago, there was one distiller per village in Burgundy, whereas today the profession is disappearing.
Thanks to its traveling still, SAB's can distill the best of Burgundy, Pinot Noir and Chardonnay in Beaune but also in Meursault, Gevrey-Chambertin and Pommard. The three-vessel copper still captures in steam the nuances and aromas of Burgundy grapes, often considered the best in the world. The eaux-de-vie first rest in small 228 liter Burgundian oak barrels. They mature for many years at room temperature, hot in summer and cold in winter.
Bottling and waxing are done by hand.
